Like my Late Summer Salad, this pasta can be made year round using frozen corn, and it will still be delicious. But I love to celebrate the season, by using fresh corn cut off the cob and garden tomatoes and herbs.
I like the salty tang of cheese on top of this dish, but it's not strictly necessary. If you choose to add cheese, feta or strong cheddar work well, and a crumbled goat cheese or aged parmesan or manchego would work well, too. Just choose a cheese with some strong flavour.
