Ginger Lime Sweet Potatoes

One of my favourite Good Cook Tricks is adding stuff to mashed potatoes.  This is a great way to make a weekday dinner a bit more special,  add polish to a company dinner and perfect your holiday feast.

The zing of ginger and lime make these sweet potatoes a great mate with barbecued or roasted salmon.

Amounts are for four average sized sweet potatoes.  Adjust to suit your crowd.

Either microwave the potatoes on high until soft, about 7 minutes, or bake at 350 for about an hour.

Cut the potatoes in half to remove some steam. 
Scrape the flesh out of the peel into a bowl.

Add                                                         2 tsp freshly grated ginger
                                                               juice of 2 limes
                                                               salt and pepper to taste
                                                               2 T butter
Mash together well with a fork. 

Reheat for a minute if necessary.
