Dill Mustard Crusted Salmon

I believe strongly in repurposing all the little jars of
condiments in the fridge. Things that come in gift baskets,
hostess gifts you don't know what to do with, they all have
a life beyond being spread over cream cheese. Here's an
example of how you can use these treasures to top fish or
chicken and create a simple main course. In this case it's a
mustard condiment I bought at Ikea, but any dill mustard
will do.


Amounts here are for two salmon filets . Adjust accordingly.

Preheat oven to 425.

Line a baking sheet with parchment paper.

Place salmon fillets on baking sheet.
Stir together                                 2T dill mustard sauce
                                                 1T Dijon mustard
Divide this mixture between salmon fillets, spreading to
coat tops.


Sprinkle each fillet with                   2T panko crumbs
                                                 salt and pepper
Press with your hand so the crumbs stick to the mustard.
Drizzle lightly with                         olive oil
Bake for 10 minutes, until tops are nicely browned.
The inside will be moist and just cooked.
