Claire's Favourite Biscotti

Don't be afraid of this long recipe. You are just making two logs, cutting them into cookies, and baking them twice. Thus the name. Biscotti means cooked twice. It's this double baking that gives them their characteristic crispy texture and makes them perfect for dunking. If you don't like yours too crispy, reduce the second baking time.

You can adjust the cookies to suit your taste. Just be generous with your flavouring. Instead of all vanilla, one teaspoon each of vanilla and almond extract works well. You could then use dried cherries instead of cranberries. Chopped dried apricots and milk chocolate chips make nice sweet biscotti. You get the idea.
