Chocolate Chip Pan Cookies

This warm, squidgy, caramel-y cookie, full of melted chocolate, is a favourite on restaurant menus.  It's very simple to make at home too, and with ice cream melting on top is a winning dessert. 

You could fancy it up with whipped cream, chocolate sauce, nuts, or any other ice cream toppings.  My favorite is just baked in a cast iron pan and simply topped with vanilla ice cream.


If it's convenient you can make the dough ahead and bake it just before serving the main course.
